What's "Hand-Roasted" Coffee?

When we say "hand-roasted" coffee beans, what do we really mean?

We don't mean we use our actual hands to apply the heat... We like to think it's the skilful art of applying heat to the beans whilst in the drum of the roaster, not forgetting varying the use of airflow, environmental factors, colour changes of the beans, and numerous other inputs. 

So... why is this better?

Well, the alternative is automatic roasting on machines that use pre-determined points, like on a graph, when the roaster reaches these temperature or time points it switches on or off (very basically). 

Great if you're churning out large quantities of coffee beans and want the same standard of beans but it doesn't take into account other factors. For instance green coffee has varying levels of moisture, meaning they may roast quicker/slower, or hotter/colder outside temperatures.

An experienced roaster can anticipate these changes ahead of time and improve the roasting results. 

Think of it like a bean-to-cup machine compared to a master barista -

you know you can tell the difference.
